What's the difference between Japanese and English Pokémon cards?

Japanese cards have:

  • A different back (Pokéball design is a bit different)

  • Sometimes other set names or exclusive artworks appear later in the West

Are Japanese Pokémon cards playable in tournaments?

Officially not outside Japan. In international tournaments, you must use cards from the English (or local) versions. For casual play, you can, of course, use them.

Will all sets released in Japan also be in English?

Most are, but often several months later. Some promos and exclusive sets, however, are only released in Japan.

Are the hits better in Japanese Booster Boxes?

Not guaranteed, but Japanese boxes often have a certain hit ratio, for example at least 1 Secret Rare per box.
